Homemade Matcha Ice Cream (no machine needed)
Ingredients:
Serves: 8 -10 small scoops
5 tbsp Matcha powder
2 tsp Hot water
4 oz Philadelphia cream cheese (1/2 brick), room temp
1 cup Heavy whipping cream (super cold)
7 oz Sweetened condensed milk, canned
1 tsp Vanilla
Note: *you want the bowl and whipping cream to be very cold- I used a larger bowl filled with ice and salt (to keep it from melting quicker) and added a smaller glass bowl (also very cold) on top.
Optional Toppings:
HOMEMADE ICE CREAM
Step by step:
In a matcha bowl, whisk together matcha and hot water, let cool to room temp
Then in cold mixing bowl, mix the cream cheese and matcha together until smooth with hand held mixer.
Once smooth, add in the heavy cream, sweetened condensed milk, and vanilla
Whip until it creates stiff peaks. Start off slow and gradually increase speed of mixer. Be careful not to over whip, it will cause the cream to granulate and you don’t want that!
When the cream is whipped, you are ready to put into a bread pan or a storage container, cover and place in freezer for minimum 5 hours or overnight!
Scoop the matcha ice cream into your favorite cup and add toppings! Enjoy!!
