Christmas Protein Balls

Ingredients:

- 1/2 cup natural peanut butter

- 2 tablespoons coconut oil

- 2 tablespoons honey (I use local)

- 1 teaspoon vanilla extract

- 1/2 cup Justins Vanilla Almond Butter protein powder

- 1 cup oats

- 2 tablespoons chia seeds

- 1/3 cup unsweetened shredded coconut

- 2 tablespoons cashew milk - if mixture seems dry you can add additional tablespoons of cashew milk so that the consistency makes it possible for the mixture to come

together

- 2 tablespoons chocolate chips + 1

teaspoon coconut oil

- Fancy sea salt, for sprinkling

Decoration:

- Sprinkles

- Ribbon

-Gold Dust

Step by step:

1. Mix the wet ingredients. You’ll want to mix together the peanut butter, coconut oil, honey & vanilla in a saucepan over low heat so they get nice and smooth.

2. Add the dry. Stir in the protein powder, then fold in your yummy add-ins: oats, chia seeds and coconut. Use a medium cookie scoop or your hands to grab dough and roll into 12 balls.

3. Put your sprinkles of choice into separate bowls and roll your protein balls in them til coated. I added a little vitamin gummy and covered it in edible glitter and added a little ornament hook to make them realistic!

3. Melt the chocolate. I drizzled chocolate on some then added sprinkles and little bows!

4. Put the balls in the refrigerator to set for about 1 hour, then enjoy!
