GF Pinecone Brownies
Brownie Ingredients:
- 1 cup mashed sweet potato (about 1
medium sweet potato)
- ½ cup almond butter
- ⅓ cup cocoa powder
- ¼ cup maple syrup
- 1 tsp vanilla extract
- ½ tsp salt
- ½ tsp baking powder
Decoration:
- Sliced almonds
- Powdered sugar
- Chocolate for melting & drizzling
Step by step:
1. Preheat your oven to 350 degree
2. Peel and steam your sweet potato until you can stick a fork through the center, once steamed, mash
3. Throw all your brownie ingredients into a mixing bowl (I use a stand mixer, but you can use a hand mixer or a whisk)
4. Mix til everything is combined - it will be thick, like fudge
5. Pour your batter into a greased or parchment lined 8x8 inch pan - use a rubber spatula to spread it out as even as you can
6. Bake for 20-25 min, or until the top is set and a toothpick or fork inserted comes out mostly clean
7. Let cool completely
8.Once cooled, cut into 4 pieces (or more for smaller pinecones)
9. Mold them into small ball then add a little point to make the pinecone shape
10. Gently press sliced almonds into the molded brownies until its full and looks like a pinecone
11. When finished, melt your chocolate and drizzle over the top of each pinecone to coat
12. Let set in refrigerator for 10-15 minutes
13. Once set, dust with powdered sugar, cut and enjoy!! 🌲
