quick & easy green pasta
Ingredients:
1 cup spinach
1 whole lemon
1/4 cup pine nuts, toasted
4-5 cloves of garlic
2-3 sprigs of green onion, chopped
1 large ripe avocado, peeled
1/4 cup parmesan cheese, grated
1/4 cup fresh basil
1/4 cup plain greek yogurt
1 cup rotisserie chicken, shredded
1 cup pasta water
S&P to taste
Your favorite pasta (I used spaghetti)
Step by step:
Start by boiling your water, cook pasta accordingly to package
While pasta is cooking, in a small pan toast the pine nuts and garlic with olive oil til browned
Once finished, in a blender add the spinach, lemon, pine nuts, garlic, green onion, avocado, parmesan cheese, basil, greek yogurt, S&P, and pasta water, blend til smooth
Once your sauce and pasta are ready, strain the pasta and add back to a large pan.
Pour the sauce over the pasta and mix til combined
Serve in your favorite dish and top off with some extra parmesan cheese, S&P, and basil! Enjoy!
