Taiwanese Jelly: my grandma's fav summer dessert
Ingredients:
2 tbsp Ai Yu seeds
4 cups mineral water (Evian or Fiji)
Diced pineapple
Honey
Lemon
Method:
Pour seeds into stocking and tie a knot. Pour water into a large bowl and with the seeds submerged, squeeze the seeds in a continuous washing motion for 5 minutes (like ur wringing out a sponge).
Set the bowl aside for 20 minutes for the jelly to set!
Spoon out and serve with pineapple cooked with honey and squeeze of lemon juice!🍋
