Summer kale salad
Ingredients:
2 bunches of kale
1/4 red onion, shaved
1 apple
5 dates, diced
1 avocado
1 cup quinoa, cooked
1/4 Japanese sweet potato, steamed & diced
7 cherry tomatos, halved
Olive oil
Balsamic vinegar
1 lemon
Honey
Salt & peper, to taste
Step by step:
De-stem kale, rip into bite size pieces and massage well with pinch of salt and olive oil until soften.
Prep all veggies, use a mandolin to slice onion. Cook quinoa in rice cooker or over stove top (follow directions on packet)
Dress the salad with olive oil, balsamic vinegar, 1/2 lemon, drizzle of honey and salt and pepper to taste!
Serve & enjoy!
