Summer kale salad

Ingredients:

  • 2 bunches of kale

  • 1/4 red onion, shaved

  • 1 apple

  • 5 dates, diced

  • 1 avocado

  • 1 cup quinoa, cooked

  • 1/4 Japanese sweet potato, steamed & diced

  • 7 cherry tomatos, halved

  • Olive oil

  • Balsamic vinegar

  • 1 lemon

  • Honey

  • Salt & peper, to taste

Step by step:

  1. De-stem kale, rip into bite size pieces and massage well with pinch of salt and olive oil until soften.

  2. Prep all veggies, use a mandolin to slice onion. Cook quinoa in rice cooker or over stove top (follow directions on packet)

  3. Dress the salad with olive oil, balsamic vinegar, 1/2 lemon, drizzle of honey and salt and pepper to taste! 

  4. Serve & enjoy!
