Chicken salad lettuce cups
Ingredients:
Rotisserie chicken
1 Celery stick, chopped
6 Cheery tomatos, halved
3 Green onions, chopped
1/2 Lemon
1/2 Purple onion, diced
1 Apple, diced
2 scoops Greek yogurt
1 tbsp Kewpie mayo
Salt & pepper to taste
2 Hard boiled eggs
4 Romaine lettuce cups
Avocado slices
Step by step:
Start by hard boiling eggs, if you don’t already have on hand
Shred the rotisserie chicken and add to a large mixing bowl
Chop and add all ingredients and add them to the bowl, mix til combined
Once all is combined, place your lettuce cups onto a plate and spoon the chicken salad into them! Sprinkle with salt and pepper and halve the hard boiled eggs on the side. Top with avocado slices and enjoy!
