Chicken salad lettuce cups

Ingredients:

  • Rotisserie chicken

  • 1 Celery stick, chopped

  • 6 Cheery tomatos, halved

  • 3 Green onions, chopped

  • 1/2 Lemon

  • 1/2 Purple onion, diced

  • 1 Apple, diced

  • 2 scoops Greek yogurt

  • 1 tbsp Kewpie mayo

  • Salt & pepper to taste

  • 2 Hard boiled eggs

  • 4 Romaine lettuce cups

  • Avocado slices

Step by step:

  1. Start by hard boiling eggs, if you don’t already have on hand

  2. Shred the rotisserie chicken and add to a large mixing bowl

  3. Chop and add all ingredients and add them to the bowl, mix til combined

  4. Once all is combined, place your lettuce cups onto a plate and spoon the chicken salad into them! Sprinkle with salt and pepper and halve the hard boiled eggs on the side. Top with avocado slices and enjoy!
