Oxtail Soup

Ingredients:

  • 2x 1 lb packs of oxtail

  • 2 carrots chopped

  • 3 celery chopped

  • 2 inch piece of ginger sliced

  • Dashi stock

  • Salt

Step by step:

  1. Bring a large pot of water to a boil, drop the oxtail in. Once boiling drain the water and rinse the meat under running water.

  2. Fill the pot back up with 8-10 cups of water with the rinsed beef and sliced ginger. Once boiling, remove the scum with a mesh spoon and reduce to simmer.

  3. Cover and let simmer for 2 hours, check and add more water periodically.

  4. Once meat is soft and tender, add in carrots and celery and simmer for 30 more minutes.

  5. At the end sprinkle in Dashi and salt to taste. Serve hot and it’s good up to 3 days! Enjoy
