Oxtail Soup with daikon and winter melon

Ingredients:

  • 2 1/2 pounds oxtails

  • 12 cups water

  • 1 large onion (cut into wedges)

  • 2 cups of daikon radish

  • 2 cups of winter melon

  • salt (to taste)

  • chopped cilantro (to garnish)

Step by step:

  1. Pre heat the oven to 350 degrees

  2. Rinse the oxtail under cold water and pat dry with paper towel

  3. Then put them on a baking sheet and roast in the over for 30-40 minutes

  4. After, add 12 cups of water, onions, and oxtail into pot. Bring to a boil and immediately turn the heat to a very low simmer.

  5. Then, simmer with the lid on for 6 hours. About 30 minutes before serving add the daikon radish and winter melon

  6. When finished, remove from heat, serve and garnish with fresh cilantro! Enjoy!
