Mediterranean Sardine Pasta

Ingredients:

  • 200g spaghetti (or any pasta)

  • 1 can sardines (preferably in olive oil, drained & flaked)

  • 2 tbsp olive oil

  • 2 cloves garlic (minced)

  • ½ tsp red pepper flakes

  • 1 tbsp capers (rinsed)

  • ½ cup cherry tomatoes (halved)

  • ¼ cup black olives

  • ½ tsp dried oregano

  • ½ lemon (zest & juice)

  • Salt & black pepper to taste

  • Parmesan cheese (optional)

Step by step:

  1. Cook pasta: Boil salted water and cook spaghetti until al dente. Reserve ½ cup pasta water, then drain.

  2. Sauté aromatics: Heat olive oil in a pan over medium heat. Add garlic and red pepper flakes, stirring for 30 seconds until fragrant.

  3. Build the sauce: Toss in capers, olives, and cherry tomatoes. Cook for 2-3 minutes until tomatoes soften.

  4. Add sardines: Flake sardines into the pan and gently stir. Pour in reserved pasta water to create a silky sauce.

  5. Finish with citrus & herbs: Add lemon zest, juice, and oregano. Season with salt & black pepper.

  6. Combine: Toss in drained pasta and mix well.

  7. Serve: With with fresh parmesan! ENJOY!
