Mediterranean Sardine Pasta
Ingredients:
200g spaghetti (or any pasta)
1 can sardines (preferably in olive oil, drained & flaked)
2 tbsp olive oil
2 cloves garlic (minced)
½ tsp red pepper flakes
1 tbsp capers (rinsed)
½ cup cherry tomatoes (halved)
¼ cup black olives
½ tsp dried oregano
½ lemon (zest & juice)
Salt & black pepper to taste
Parmesan cheese (optional)
Step by step:
Cook pasta: Boil salted water and cook spaghetti until al dente. Reserve ½ cup pasta water, then drain.
Sauté aromatics: Heat olive oil in a pan over medium heat. Add garlic and red pepper flakes, stirring for 30 seconds until fragrant.
Build the sauce: Toss in capers, olives, and cherry tomatoes. Cook for 2-3 minutes until tomatoes soften.
Add sardines: Flake sardines into the pan and gently stir. Pour in reserved pasta water to create a silky sauce.
Finish with citrus & herbs: Add lemon zest, juice, and oregano. Season with salt & black pepper.
Combine: Toss in drained pasta and mix well.
Serve: With with fresh parmesan! ENJOY!
