Easy Sweet Potato Mash Toast with Dijon Mustard Sauce
Ingredients:
2 sweet potatoes
olive oil
salt and pepper to taste
cinnamon
4 cups water
Sauce:
2 tbsp Maille Dijon mustard
2 tbsp mayo
1 tsp of honey
1 tbsp olive oil
salt and pepper
Step by step:
Start to boil your water
Preheat oven to 450 degrees (can use air fryer)
Peel and cut (1/2 in pieces) sweet potatoes
Put potatoes in boiling water for 10-15 minutes or until soft
Remove water from pot and add potatoes to a pan
Mash the potatoes down into 1/4 in thick and drizzle olive oil over the top
Bake or air fry your potatoes for 10-15 minutes or until crispy
While your potatoes are baking make your sauce
In a small dish combine mustard, mayo, honey, olive oil, and salt and pepper; mix and set aside
Once potatoes are finished, place mashed potatoes on toast and drizzle sauce over the top! Add a dash of cinnamon to top it off! *chef’s kiss 😘
