Easy Sweet Potato Mash Toast with Dijon Mustard Sauce

Ingredients:

  • 2 sweet potatoes

  • olive oil

  • salt and pepper to taste

  • cinnamon

  • 4 cups water

Sauce:

  • 2 tbsp Maille Dijon mustard

  • 2 tbsp mayo

  • 1 tsp of honey

  • 1 tbsp olive oil

  • salt and pepper

Step by step:

  1. Start to boil your water

  2. Preheat oven to 450 degrees (can use air fryer)

  3. Peel and cut (1/2 in pieces) sweet potatoes

  4. Put potatoes in boiling water for 10-15 minutes or until soft

  5. Remove water from pot and add potatoes to a pan

  6. Mash the potatoes down into 1/4 in thick and drizzle olive oil over the top

  7. Bake or air fry your potatoes for 10-15 minutes or until crispy

  8. While your potatoes are baking make your sauce

  9. In a small dish combine mustard, mayo, honey, olive oil, and salt and pepper; mix and set aside

  10. Once potatoes are finished, place mashed potatoes on toast and drizzle sauce over the top! Add a dash of cinnamon to top it off! *chef’s kiss 😘
