Cozy Loaded Baked Potato and Cauliflower Soup
Ingredients:
1 head of cauliflower (cut into florets)
2 medium sized russet potatoes (peel and chop into 1.5 inch rounds)
1.5 cups chicken broth
1.5 cups whole milk
3 tbsp sour cream
Salt and pepper
Cheddar and jack cheese
Bacon
Green onion
Step by step:
Steam cauliflower florets til soft
Boil large pot of water and add potato rounds and cook until you can pierce a fork through
Add milk, chicken stock, steamed cauliflower and potatoes into a high speed blender and blend til smooth. You can also use an immersion blender if you have one ( I need to get one haha)
Bring the mixture back into a large pot and heat over low, add sour cream, chopped green onion and season with salt and pepper to taste!
Remove from heat, serve in a bowl. Garnish with cheese, bacon and more green onion. Enjoy this easy and cozy soup! 🥔🍲
