Cozy Loaded Baked Potato and Cauliflower Soup

Ingredients:

  • 1 head of cauliflower (cut into florets)

  • 2 medium sized russet potatoes (peel and chop into 1.5 inch rounds)

  • 1.5 cups chicken broth

  • 1.5 cups whole milk

  • 3 tbsp sour cream

  • Salt and pepper

  • Cheddar and jack cheese

  • Bacon

  • Green onion

Step by step:

  1. Steam cauliflower florets til soft

  2. Boil large pot of water and add potato rounds and cook until you can pierce a fork through 

  3. Add milk, chicken stock, steamed cauliflower and potatoes into a high speed blender and blend til smooth. You can also use an immersion blender if you have one ( I need to get one haha) 

  4. Bring the mixture back into a large pot and heat over low, add sour cream, chopped green onion and season with salt and pepper to taste!

  5. Remove from heat, serve in a bowl. Garnish with cheese, bacon and more green onion. Enjoy this easy and cozy soup! 🥔🍲
