Turkey Tuesday recipe - Turkey Lettuce Cups

Happy #TurkeyTuesday !

One of my go-to dishes when I want a) something healthy and delicious b) a meal with a good source of lean protein and c) something I can whip up quick, I make these lettuce wrapped turkey tacos topped with avo-sour cream which is to die for.

Oh! And it's a perfect meal to prep ahead of time too... because left overs are just as tasty, if not better.

I love cooking with lean turkey meat because it can help reduce blood cholesterol levels and promote heart health. It is also low in calories and fat, but high in proteins and B-vitamins so its a great alternative to ground beef and tastes delicious too.  Foster Farms Organic Ground Turkey   is 93% lean and is California-grown and organic. They don't use any antibiotics, hormones or added steroids and are fed an organic vegetarian diet - all of which are important to me when I choose my meats.

Ingredients:

1 lb Foster Farms Organic Ground Turkey

2 cloves garlic- minced

1/2 cup red onion- diced

3 tbsp cilantro- chopped

1 15 oz can black beans

1 tsp cumin

1 tsp chili powder

1/2 tsp paprika

1/2 tsp oregano

1/2 tsp salt

10-12 lettuce leaves

cherry tomatoes, cilantro, sliced avocado and radish for garnish

Avocado crema:

1/2 hass avocado- chopped

1/4 cup reduced-fat sour cream

1 tbs fresh lie juice

1 medium jalepeno- chopped

2 tbsp cilantro- chopped

1/4 tsp salt

black pepper

For the turkey-bean filling:

Spray a large skillet with olive oil and heat over medium high heat. Add the onion and cook until fragrant -1 to 2 minutes. Next add the ground turkey, season with 1/4 tsp salt and cook while breaking up the meat into small pieces until no longer pink - about 5 minutes. Add the beans, garlic, cumin, chili powder, oregano, paprika and cilantro. Stir well and reduce heat to low and cover the pan. Simmer for 20 minutes covered to infuse the flavors. Uncover and add 1/4 tsp of salt to taste. Cook through another 5 minutes.

For the avocado crema:

Combine all the ingredients in a blender and add 1/4 cup water. Blend til smooth!

To serve:

Scoop a spoonful of turkey bean taco filling into each lettuce cup and garnish with cherry tomatoes, cilantro, sliced avocado and radish. Drizzle on the avocado crema and enjoy!
