Simple Winter melon & pork soup One of my favorite soups for gut health and digestion. I can’t stop making it now that it’s chilly out! I have soup with every meal to rehydrate and warm my body up and it’s helped so much postpartum. The pork and winter melon will melt in your mouth , can’t wait for you to try it!Ingredients:- 1/4 winter melon (outer skin sliced and cut into large 2” cubes)- 2 lbs pork ribs - Thumb of ginger thinly sliced- 8 cups water- 1 tsp salt- 1/4 tsp white pepper- Green onion for garnish Step by step:1. Rinse the ribs under running water to remove impurities. 2. Next, add the ribs to a large pot and fill with tap water til the ribs are covered- bring to a boil, turn off the heat and drain the ribs. This step is important to clean the meat so the soup is delicious and clear. Rinse the ribs again under running water and return to cleaned pot. Put the blanched ribs, ginger slices, and 8 cups of water into the pot and bring it to a boil. Cover and simmer for 30 minutes. Ladle any excess grease or impurities that float to the top. 3. Add the winter melon in and cook simmered for another 15 minutes. Add salt and white pepper to taste and its ready to serve!
