Nate's Superfood Muffins Recipe!

I eat one before my morning workout with tea
I eat them as a snack
Even for dessert after dinner topped with yogurt and berries
They are so versatile and easy to take on the go
they give me the perfect amount of energy and substance when i’m hungry
and together we are bringing you the step by step recipe
after perfecting it over the course of our relationship

Yields 12 muffins (half full in a muffin tin)
INGREDIENTS:
1 ripe banana
10 raspberries
1 egg
2 tbsp grass fed unsalted butter, ghee, or coconut oil
1/3 cup of greek yogurt
1/4 tbsp of cinnamon
1 tbsp chia seeds
1 tbsp flax seeds
1 tbsp maca powder (optional for energy)
1 scoop vanilla powder (optional for protein)
1/2 cup almond milk (or plant/nut milk of choice)
1/4 cup oat bran or quick cook oats
1/4 cup paleo baking flour*
1/4 cup buckwheat flour*
1/4 cup sprouted grain pancake mix*
1/4 cup banana paleo pancake and waffle mix*
So you may look at the last 4 ingredients and think… there’s no way I’m buying all those different pancake mixes and flour plus I totally know it ADDS UP $$$ - not to mention sound overwhelming. Thats why I added an *asterisk so you have the OPTION to substitute those ingredients for 1 cup of flour or pancake mix of your choice.
We buy most of our ingredients from Wholefoods, Erewhon or Lassens.
METHOD:
First, Preheat the oven to 300
Next, use a large mixing bowl and mash the banana, raspberry and egg into a creamy thick paste.
Next, heat your choice of butter, ghee or coconut oil into a small sauce pan over simmer to melt the oil. Then, add it into the mixing bowl and whisk.
Next, add 1/3 cup of plain greek yogurt and dash of cinnamon and mix well
Next, add 1/2 cup almond milk, maca and vanilla protein powder and mix well
Next, make the chia flax egg: in a seperate small bowl, add 1 tbsp chia seeds + 1 tbsp flax seeds with 2 tbsp of hot water and mix until it swells up into a paste. Add that into the mixing bowl and whisk well
Lastly, add in the oats and the last 4 ingredients (flour + pancake mixes) or1 cup of your flour of choice and mix it all in until you have a pancake batter like texture. You may need to add in couple splashes of milk to reach the desired consistency.
Spray muffin tin with non stick coconut oil or butter and scoop the mixture evenly into each cup. They will not fill the cups to the top, we like making thinner muffins because they are easier to cook through and eat!
Cook muffins for 20 minutes at 300 heat. Once they are cooked, take them out of the oven and let cool for 20 minutes before you indulge. We store them in tupperware’s in the fridge and they taste even better with time!
