Easy Veggie Curry Meal Prep

Ingredients:

  • 3 garlic cloves, minced

  • 1/2 in. ginger, minced

  • 1/4 kabocha squash, chopped

  • 1/2 onion, chopped

  • 1 tomatoes, deseeded & chopped

  • 1 Japanese eggplant, deseeded & chopped

  • 1 red pepper. chopped into 1 in. cubes

  • 1/2 carrot, chopped into half moons, 1/4 in. thin

  • 3-4 cups dashi stock

  • 1 tbsp soy sauce

  • 1 tbsp miso

  • 1 tbsp curry paste

  • 1 tbsp Olive Oil

Step by step:

  1. In a large pot, heat the olive oil on medium heat. When warm, add in minced garlic and ginger. Cook til fragrant.

  2. Add in all the veggies and cook til they become soft. Then add in the dashi stock + soy sauce.

  3. Once mixed well add in the curry paste & miso. Mix well, til both are fully dissolved. Serve in your favorite bowl or let cool and store in air tight container in the fridge up to 1 week!
