Coconut Caramel date oatmeal

Ingredients:

  • 1/3 cups rolled oats

  • 1/3 cup water

  • 2/3 cup light canned coconut milk

  • Pinch of salt

  • 1 shredded date

For toppings:

  • Fresh banana

  • Blueberries

  • Sprinkle of maple syrup

Step by step:

  1. Soak 1/3 cups rolled oats in 1/3 cup water for at least an hour or overnight. This will ensure quicker cooking times and the perfect consistency.

  2. In a small sauce pan, over low heat- add the soaked oats 2/3 cup light canned coconut milk, pinch of salt and 1 shredded date.

  3. Keep stirring until consistency is reached- shouldn’t take more than 5 minutes.

  4. Serve immediately with fresh banana, blueberries and sprinkle of maple syrup. ENJOY!
