Coconut Caramel date oatmeal
Ingredients:
1/3 cups rolled oats
1/3 cup water
2/3 cup light canned coconut milk
Pinch of salt
1 shredded date
For toppings:
Fresh banana
Blueberries
Sprinkle of maple syrup
Step by step:
Soak 1/3 cups rolled oats in 1/3 cup water for at least an hour or overnight. This will ensure quicker cooking times and the perfect consistency.
In a small sauce pan, over low heat- add the soaked oats 2/3 cup light canned coconut milk, pinch of salt and 1 shredded date.
Keep stirring until consistency is reached- shouldn’t take more than 5 minutes.
Serve immediately with fresh banana, blueberries and sprinkle of maple syrup. ENJOY!
