3 Easy Chinese Recipes from my Dad
Hi Everyone!
Seafood is comfort food for me so, I thought I’d share some of my dad’s famous Chinese recipes that I grew up with. Enjoy!
SALT AND PEPPER SHRIMP
Ingredients:
Fresh Shrimp
Green Beans
Green Onion
Ginger
Carrots (sliced diagonally creating an oval shape)
Step by Step:
Clean and de-vein shrimp and prep your veggies.
Pan fry your shrimp with olive oil until the color of the shrimp begins to change to red then set aside. Be sure not to cook for too long because we will be adding the shrimp back in once the veggies are cooked. You want your shrimp to be 90% cooked.
Using the olive oil still in the pan, add in your carrots, green beans, green onions and finely chopped ginger and pan fry.
Once your veggies are done add your shrimp back into the pan.
Season to taste with salt and pepper and you’re done!
I wasn’t kidding when I said easy, right?
STEAMED SEA BASS
Ingredients:
Whole Sea Bass
Green Onion
Soy Sauce
Rice Wine Vinegar
Sugar
Step by Step:
You will need a steamer for this recipe. Begin by adding water to your pan until boiling. You don’t want your fish to be in the water, just above so the steam from the boiling water can cook it.
Put the whole sea bass into the top portion of your steamer and cover with a lid. Depending on the size of your fish, the cook time can vary between 10-15 minutes.
Prepare your sliced green onions while the fish is steaming.
In a separate bowl mix soy sauce, rice wine vinegar and some sugar to taste.
Get a separate frying pan and begin heating some olive oil.
Once the steamed fish is finished cooking move onto a serving platter.
Pour sauce mixture over the fish and then add the green onions on top.
Lastly and most excitingly, pour your heated oil over the fish and hear the sizzle and watch the steam. All done!
CRAB MEAT EGG DROP SOUP
Ingredients:
Chicken Broth
Real Crab Meat
Cornstarch or Potato Starch
Egg
Green Onion
Step by Step:
Start by bringing the chicken broth to a boil.
Once the soup is boiling add in your crab meat and some cornstarch to make the soup thicker.
Sprinkle in some salt to taste.
Whisk your egg(s) and begin pouring into the soup gradually.
Portion out into your bowls and use green onions as garnish. Done!
