2 INGREDIENT PANCAKE!
My friend Jocelyn showed me this recipe and I had to make it. Anything that doesn't require a lot of time, lots of dishes, and is healthy= I'm in. There are options to add different tastes to it (such as pumpkin spice, maybe some cacao chips, coconut, ground chia seeds, etc.) but they taste perfect with just 2 ingredients: 1 egg and 1 banana.
The batter: Mash the banana until it forms a paste. Then crack the egg and mix well. I added a dash of cinnamon and a drop of vanilla extract.
Heat coconut oil on a pan over medium high. The trick is to make 3" mini pancakes (about 1.5 tbs of batter at a time). Cook until golden brown and flip!
I wiped each pancake with a paper towel to take off any excess oil.
Top with greek yogurt : ) It's a healthy alternative to whip cream and tastes delicious
Drizzle with pure maple syrup and fresh banana coins
They are super light, doesn't make you feel full or bloated and perfect for a quick breakfast or snack. Enjoy!!
